Rakushki pechenyesi

Hammamiz bilamizki o’zbeklarda to’y va harhil marosimlar juda ko’p. Qachonki to’yga taklif qilishsa oyim tog’ora dardiga tushardilar. Vaqtlari bo’lsa o’zlari harhil pishiriqlar pishirardilar, vaqt yetmasa bir tanishlariga  “zakaz” yani buyurtma berardilar. Ana shunday buyurtmalardan biri Rakushki pechenyesi edi. Tayyor tog’ora uyga kelardi, men va ukam albatta ichidan bitta ikkita “o’g’irlardik”, oyim urushib berardilar va dasturhonni yopib to’yga olib ketardilar. Bu pechenyeni retseptini shuncha so’rasak ham oyimni tanishlari “firma siri” deb bermasdi. Birkun jiyanimni tort pishirish kursiga borayotganini bildim. Shu pechenyeni retsepti bormi deganimda, onsonku!-deb birpasta yozib bergandi. Rostdan ham coca colani retseptiday saqlanadigan retsept emas ekan, deyarli hardoim uyimizda bor mahsulotlardan tayyorlasa bo’lar ekan. Faqatgina Turkiyada smetana yo’qligi sababli men slivki ishlattim, mazasida katta farq yo’q.

Kerakli masalliqlar:

70 dona pechenye uchun

  • 1 stakan smetana
  • 250 gr margarin yoki sariyog’ (men sariyog’ ishlattim)
  • 5 ta tuhum sarig’i
  • 4 stakan un
  • Yarim choy qoshiq hamir oshiruvchi modda (ruscha разрыхлитель теста)

 

Ichiga solish uchun beze:

  • 5 ta tuhum oqi
  • 1,5 stakan shakar
  • Bir choy qoshiq limon suvi 

Ustiga:

  • Shakar upasi

Tayyorlanishi:

1. Un va hamir oshiruvchi moddani yahshilab aralashtiramiz. Sariyog’ qo’shib qol’da yoki oshxona kombaynida aralashtiramiz, shunda un bilan sariyog’ ushoqday holga keladi.

2. Yuqoridaki aralashmaga tuhum sarig’i va smetana yoki slivki qo’shib aralashtiramiz. O’rta qattiq hamir hosil bo’ladi.

3. Hamirdan zuvalalar uzib, to’p shakli berib, bir idishga terib chiqamiz. Tayyor to’plarni holodilnikka 30-40 minutga qo’yib qo’yamiz.

4. 15-20 minutdan so’ng beze tayyorlashni boshlaymiz.  Tuhum oqini mikser yordamida ko’pirtiramiz, kam kam shakar solib ko’pirtirishni davom ettiramiz. Shakar tugagandan so’ng limon suvi solib 1 marta ko’pirtirib yuboramiz.

5. Hamirni holodilnikdan olib har bir zuvalani 1-2 mm qalinlikda doira shaklida yoyib chiqamiz, ichiga 1 qoshiq beze solib, oldin ikkiga keyin to’rtga tahlab pergament qog’ozi solingan idishga terib chiqamiz.

6. Oldindan isitilgan 150-160 daraja duhovkada 20-25 minut davomida pishirib olamiz.

7. Duhovkadan pechenyelarni chiqarib ustidan shakar upasini choy elagiga qo’yib yoki dokaga solib sepib chiqamiz.

 

Izoh: Uyda ikki kishi bo’lgani uchun yuqoridaki retsept yarim o’lcho’vga ko’ra tayyorlandi.

      Rasmda ko’rib turganingizdek menda ham ochilgan, sal ochilishi mumkin lekin tamoman ochilib ketayotgan bo’lsa ichiga kamroq beze va tahlayotganda uchlarini yahshilab yopishtirib tahlang.
