Zeytinyağlı sarma-Zaytun yog’li do’lma

Do’lma ko’pchilik davlatlarda tayyorlansa ham har bir davlat o’ziga hos usul va farqli masalliqlar bo’yicha tayyorlaydi. Turkiyada odatda go’shtli va zaytun yog’li do’lma tayyorlanadi. Turkiyaning sharqiy qismida ko’proq go’shtli, ya’ni qiymali do’lma tayyorlanib, bazi shaharlarda to’g'ralgan go’shtdan, hattoki suyakli go’shtdan ham tayyorlashadi. Albatta suyakli go’sht ovqatga o’zgacha ta’m beradi, lekin yeyayotganda extiyot bo’lish kerak:) Zaytun yog’li do’lmada go’sht ishlatilmaydi, oldin ham yozib o’tganimdak zaytun yog’li taomlar iliq yoki sovuq holda iste’mol qilinadi. O’zbekistonda do’lma odatda uzum bargi, karam bargi, bulg’or qalampiridan tayyorlansa, Turkiyada bundan tashqari pazı (рус. мангольд)bargi, kara lahana bargi (рус. Кале), baqlajon, kabachki, quritilgan bulg’or qalampiri va quritilgan baqlajondan ham tayyorlanadi. Bargdan tayyorlanadigan do’lmalarga “sarma” ya’ni “o’ralgan” , sabzavot ichi to’ldirilib tayyorlanadigan do’lmalarga esa “dolma” ya’ni “to’ldirilgan” deyiladi.

Zaytun yog’li sarma uchun bahorda yangi chiqqan barglar ayni muddao hisoblanadi. Turkiyada bahor oylarida yangi uzilgan barglar bozorlarda kilolab sotiladi, qishda esa tuzli suvga bo’ktirib sotishadi. Men yangi chiqqan paytda sotib olib yuvmasdan va taxlamasdan muzlatgichga solib qo’yaman, kerak bo’lgan paytda bir qismini ajratib olib, qaynagan suvga bo’ktirib ishlataman, asosiysi asta sekinlik bilan ajratib olish, bo’lmasa muzlagan barglar sinib ketishi mumkin.   • 2 stakan guruch (200 ml’li stakan)
  • 1 osh qoshiq quruq yalpiz
  • 1 choy qoshiq yanchilgan qora murch
  • 0,5 choy qoshiq dolchin (рус. корица)
  • 2 dona qand yoki 1 choy qoshiq shakar
  • 2 osh qoshiq kuş üzümü (mayda magiz, turk do’konlarida sotiladi, pastda rasmda ko’rsatilgan
  • Yarimta limon suvi
  • 1 bog’ petrushka
  • 0,5 choy qoshiq tuz
  • 1 turkcha choy stakan qaynagan suv (100 ml)
  • 0,5 kg uzum bargi
  • 0,5 turkcha choy stakan zaytun yog’i (50 ml)
  • 2 stakan qaynagan suv (200 ml’li stakan)

Tayyorlanishi:

1. Piyozni mayda to’g’rab 100ml yog’da archa yong’og’i bilan o’rta olovda qovuramiz. Piyoz qizarishi shart emas.

2. Guruchni yuvib, suvini suzib piyozga qo’shamiz, ketidan yalpiz, murch, dolchin, şakar, magiz, yarim limon suvi, tuz, to’g’ralgan petrushka qo’shib aralashtiramiz. 100 ml qaynagan suv qo’shib guruch suvni shimib olguncha qopqog’ini yopib damlaymiz. Suvi tugagandan keyin qopqog’ini ochib sovutamiz.

3. Uzum barglari yangi uzilgan bo’lsa qaynagan suvda 1-2 minut ushlab turib suvini to’kib tashlaymiz. Tuzlangan barglar bo’lsa suvda yahshilab yuvib tashlaymiz, agar barglar qattiq bo’lsa qaynagan suvda 1-2 minut qaynatamiz.

4. Qozon tagiga 1 qavat qilib uzum bargini terib chiqamiz. Barg ichiga 1 osh qoshiq tayyorlagan qiymamizdan solib, barmoq qalinligida o’rab qozonga terib chiqamiz. Sarmalarni eng ustiga yana 1 qavat barg terib chiqamiz. Ustidan 50 ml zaytun yog’ini quyib chiqamiz.

5. Terilgan barglarni ustidan tekkis tarelka yopib 2 suv stakan qaynagan suv qo’shamiz. Gazni baland qilamiz, suv qaynab chiqqandan keyin gazni pasaytiramiz. Qozon qopqog’ini yopib past olovda 30 minut davomida pishiramiz.

Pishib chiqqandan keyin, qopqog’ini ochib sovushini kutamiz. Sovugandan keyin ustdaki barglarni olib tashlab tarelkaga terib chiqamiz.
