Muhallebili kadayıf tatlısı-Kremli kadayıf

Muhallebili kadayif tayyorlash usulini yozishdan oldin, muhallebi va kadayif haqida ozgina ma’lumot berib o’tishim kerak menimcha. Muhallebi-sut, un va kraxmaldan tayyorlangan krem bo’lib, nafaqat pishiriq kremi sifatida balki alohida muhallebi shirinligi sifatida sovuq holda, ustidan handon pista yoki boshqa yong’oqlar sepib desert sifatida tortiladi.Kadayif esa, un va sut aralashmasidan tayyorlanib, katta tovada vermisheldan ham ingichka qilib quyilib, pishirib olinadi.

Odatda kadayif hamiri do’konlarda tayyor holda sotiladi. Chet elda yashasangiz Turk, Arab do’konlarida topishingiz mumkin. Kadayif tanlayotganda tayyor kadayif va hom kadayif sizni chalg’itishi mumkin. Tayyor kadayif ozgina qizargan bo’ladi va paketlangan bo’ladi, bunday kadayifga shakar siropi qo’shsangiz kifoya, tayyor desertga aylanadi, hom kadayif esa rasmda ko’rsatilganday oq rang bo’ladi va ochiq holda gram yoki kilolab sotiladi. Kremli kadayif uchun hom kadayif olishingiz kerak.

Kerakli masalliqlar:

  • 300 gr kadayif
  • 6 osh qoshiq shakar
  • 5 osh qoshiq sariyog’
  • 1 stakan maydalangan yong’oq

Muhallebi:

  • 1 lt sut
  • 4 osh qoshiq un
  • 2 osh qoshiq jo’hori kraxmali
  • 2 turk choy stakan shakar (160 gr)
  • 1 paket shanti kremi kukuni

 

Tayyorlanishi:

  1. Kadayifni 1-2 soatga muzlatgichga qo’yib qo’yamiz.
  2. Kadayif qotguncha krem tayyorlaymiz. 1 stakan sutni qozonga bo’shatib, un, krahmal, shakar qo’shib yaxshilab aralashtiramiz. Gazni yoqib tinmay aralashtirib, quyilishni boshlaganda qolgan sutni qo’shamiz. Sut quyilganda gazdan olamiz va ilishini kutamiz.Krem iligandan keyin shanti kremi kukunini qo’shib mikserda ko’pirtiramiz.
  3. Kadayifni muzlatgichdan olib qo’lda onsongina maydalab qozonga solamiz. Qozonda o’rta olovda ozgina qizarguncha qovuramiz va sariyog’, shakar qo’shib jigarrang tusga kirguncha (kuyib ketmasligiga e’tibor bering) to’htamasdan aralashtiramiz. Jigarrang tusga kirgandan keyin maydalangan yong’oq qo’shib aralashtiramiz.
  4. Yuqoridaki kadayif aralashmasining yarmini bir idishga to’kib, qo’lda preslab yoyamiz. (Idishingizni diametri 25-30cm bo’lsa yaxshi, bundan kichkinasida qalin, kattasida yupqa kadayif chiqadi.) Ustidan tayyorlagan kremimizni qoshiqda yoyib, yana ustidan kadayifni sochib/yoyib chiqamiz.Sovutgichda 2 soat turgandan keyin kesib tortamiz.

      Ra’no, agar Toshkentda tursangiz afsuski kadayif topa olmasangiz kerak, chet elda esa faqat turk, arab do’konlarida sotiladi.

    Husnora, bu tatlini bir turk opa o’rgatgandi, faqat ustidagi kadayifni kesib, tarelkalarga qo’yishdan oldin sepish kerak, o’shanda qisir-qisir bo’ladi degandi. Haqiqattan ham juda mazali, yengilgina shirinlik. Juda yozbop.

      Ha albatta yeryong’oq ham solsangiz bo’ladi.
      Kunafa shirinligi ham kadayif hamiridan qilinadi, balki shunga kanafa deb yozilgan bo’lishi mumkin, agar hamirni rasmda ko’rsatilgandaka bo’lsa va hom, yumshoq bo’lsa unda qilsangiz bo’ladi. Agar oldindan qovurilgan bo’lsa o’hshamaydi. Oppoq rang bo’lishi kerak.
