Kuru fasulye

Kuru fasulye turk oshxonasining milliy ovqatlaridan biri hisoblanadi. Oq fasoldan tayyorlanib, go’shtli, go’shtsiz, sucuk yoki pastırmali bo’lishi mumkin, tayyorlanish usuliga ko’ra gazda yoki duhovkada pishirilishi mumkin.Fasol kaloriyasi yuqori bo’lgani uchun odatda bu ovqat qish oylarida tayyorlanadi. Yonida pilav ya’ni turk oshi yoki bulgur (bug’doy) oshi bilan tortiladi. Bu ovqatni tayyorlash uchun fasol bir kun oldin uvitib qo’yiladi, men odatda vaqt tejash uchun ko’pgina fasolni uvitib ortiqchasini muzlatgichda qo’yib qo’yaman, kerak bo’lgan paytda olib eritmasdan ishlataveraman.

 

Kerakli masalliqlar:

4-5 kishilik

  • 3 stakan oq fasol
  • Yarim stakan kungaboqar yog’i
  • 1 ta piyoz
  • 200-300 gr qo’y yoki mol go’shti, suyakli bo’lsa yaxshiroq
  • 1 ta sabzi
  • 1-2 osh qoshiq tomat
  • Bir osh qoshiq tuz va ta’bga ko’ra murch, achchiq garmdori
  • Suv

 

Tayyorlanishi:

  1. Fasolni bir kun oldin suvda uvitib qo’yamiz.
  2. Ertasi kun uvigan fasolni suvini to’kib tashlab, yana suv qo’yib qozonda 10 minutcha qaynatib olamiz, shunda fasol gazini bir miqdor chiqarib yuborgan bo’lamiz.
  3. Alohida qozonda yog’da mayda to’g’ralgan piyozni ozgina qizarguncha qovuramiz, ketidan 2-3cm kubik shaklda to’g’ralgan go’sht solib qovuramiz, keyin 1-2cm kubik shaklda to’g’ralgan sabzini solib qovuramiz. Tomat, tuz va ziravorlarni qo’shib, yaxshilab aralashtirib, qaynatilgan va suvi suzilgan fasolni qo’shamiz. Ketidan suv solamiz, suv fasoldan 2-3 cm tepada bo’lishi kerak. Suv qaynab chiqquncha baland olovda, keyin esa o’rta o’lovda suvi fasol bilan teng miqdorda bo’lguncha va fasol pishguncha pishiriladi.

Agar düdüklü tencere ya’ni tez pishiradigan qozonda pishirsangiz 30 minut o’rta olovda pishiring, qopqog’ini ochganda suvi ko’p bo’lsa qopqog’i ochiq holda ozgina pishirsangiz fasol suvini tortib oladi. Fasol pishganda yumshoq, suvi esa quyuqroq va shirali bo’lishi kerak.
