Napoleon tortining harhil retseptlari bor, tayyorlash texnikasi bir hil bo’lsa ham masalliqlari farq qilishi mumkin, kimdir ko’p qavatli, kimdir yog’liroq yoki quruqroq yoqtiradi. Bu retsept bilan Napoleon o’rta me’yorda yog’li va hamiri ham o’rta me’yorda yumshoq bo’lib chiqadi.

Kerakli masalliqlar:

Hamirga:

  • 400 gr margarin yoki sariyog’
  • 5 stakan un
  • 1 stakan sovuq sut

Kremiga:

  • 1 banka (400gr) quyultirilgan sut (sgushenka)
  • 2,5 stakan slivki (Turkiyada krema deb sotiladi)
  • Yarim stakan shakar (shakar solmasa ham bo’ladi, Turkiyadakilar shirin yoqtirgani uchun shakar solaman.
Orasiga:
1 stakan  maydalangan yong’oq (retseptda yong’oq ishlatilmaydi, turk o’rtoqlarim talabiga ko’ra yong’oq qo’shaman)

Tayorlanishi:

Saryog’ni qirg’ichdan chiqarib, un bilan qo’lda uqalab, yaxshilab aralashtiramiz. Ketidan sovuq sutni solib hamir qoramiz. 10-12 bo’lakka bo’lib, bir idishga solib ustini sochiq bilan yopib qo’yamiz. Har bittasini olib, 2-3 mm qilib yoyamiz, yoyganda un sepib yoysangiz bo’ladi, yopishmaydi, yoyilgan hamirni ustidan lagan yoki boshqa shakl qo’yib kesib olamiz, shunda hamirlar hamasi birhilda chiqadi. Chetidan kesilgan qiyqimlarni yana birlashtirib, sochiqni tagiga qo’yib qo’ying, ohirida yana bir qavat hamir chiqadi. Pishirib, maydalab ustiga sepish uchun kerak bo’ladi. Duhovka listiga pergament qog’oz yozib, hamirni joylashtirib, birqancha joyidan vilka bilan teshib, oldindan isitilgan duxovkada, 200 darajada qizarib chiqquncha pishirib olamiz. Har bir hamirni huddi shu usulda pishirib olamiz.

2. Krem uchun, slivkini bir idishga solib mikserda baland tezlikda oz-ozdan shakar solib ko’pirtiramiz, uzoq vaqt ko’pirtirmaslikka harakat qiling, bo’lmasa krem o’tirib qoladi. Ketidan 1 banka sgushenkani solib, qoshiqda aralashtiramiz.

3. Tort yasash uchun oldin tort uchun mos idish yoki podnos qo’yib ustidan pergament qog’ozni kattaroq qilib kesib qo’ying, ustiga maydalangan hamir sepganda chetga to’kilib ketmasligi uchun. Yoki tortni dasturhonga butun qo’yadigan bo’lsangiz, tort idishini chetiga pergament qog’ozdan eni 5 cm qilib kesib qo’yib, to’rt tayyor bo’lganda, qog’ozlarni olib tashlaysiz, idish ham toza turadi.

4. Pishgan hamirni tayyorlangan idish ustiga qo’yib, ustidan bir tekkislikda qilib krem surib, ikkinchi hamirni qo’yamiz, shu shaklda hamma qavatlarni orasiga krem surib, ohirida ustiga va yonlariga krem surib, bitta qavat hamirni yaxshilab maydalab, ustidan sepib chiqamiz. Tayyor tortni ustidan kengroq qilib strech plenka bilan o’rab, xolodilnikka krem hamirga singishi uchun 6-12 soatga qo’yib qo’yamiz.

      Tuhum solib ko’rmaganman, lekin 1-2 ta tuhum solinsa o’zgarish bo’lmasa kerak. Ko’p solinsa hamir qavat-qavat bo’lib pishmasa kerak.
